Description

My husband’s favorite chicken meal. It can probably feed 4 if your husband doesn’t get seconds.

Ingredients

  • 1 box Cornbread Mix (and The Ingredients Listed On The Box)
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 whole Small Yellow Onion Or 1/2 Vidalia Onion
  • Nature's Seasons Seasoning Blend (or An Equivalent)
  • 1 package Boneless, Skinless Chicken Breasts
  • Hot Sauce, to taste
  • ½ bottles BBQ Sauce
  • 1 cup Chicken Broth
  • 1 Tablespoon Worcestershire Sauce
  • 1 can Pineapple Chunks, drained

Preparation

1. Preheat the oven and fix the cornbread according to the instructions on the box. Cook the cornbread while you fix the chicken.

2. Heat a skillet with the extra virgin olive oil over medium high heat. Add the chopped onions and season with Nature’s Seasons. Let the onions soften for five minutes and stir occasionally.

3. While the onions are cooking, chop the chicken breasts into smaller pieces. Add these to the skillet. Season the chicken with the seasoning blend. Cook the chicken until it is cooked through.

4. Once the chicken is cooked, lower the heat to medium heat. Add the hot sauce, BBQ sauce, chicken stock, and Worcestershire sauce. Stir everything together, and let the sauce simmer for 8 minutes.

5. I combine the cornbread, chicken mixture and pineapple chunks together on my plate. My husband prefers them to be separate.
