Description

One of my all-time favorites. If you’re running short on time, skip the whipped potatoes step and just stuff a plain baked potato! Still delicious!

Ingredients

  • 3 whole Chicken Thighs
  • 1 whole Onion, Chopped
  • 2 cups BBQ Sauce
  • 2 whole Baking Potatoes, Large
  • 2 cups Shredded Cheddar Cheese, Divided
  • ¼ cups Heavy Whipping Cream
  • 2 Tablespoons Butter
  • 1 teaspoon Salt
  • Black Pepper To Taste

Preparation

Combine chicken thighs, chopped onion, and BBQ sauce in a crock pot. Cook on low for 6-8 hours.

Remove chicken from the crock pot and shred using two forks. Return to the crock pot and turn off. Allow chicken to marinate in the BBQ sauce.

Preheat oven to 375°F.

Wash potatoes and poke several holes in each. Wrap with plastic wrap and microwave for 10-15 minutes or until a knife inserted in the center goes all the way through with ease. Allow to cool.

Once potatoes have cooled, scoop out the potato into a large bowl. Reserve skins for stuffing.

In a large bowl, combine potatoes, 1 3/4 cup cheddar cheese, whipping cream, butter, and salt and pepper. Whip mixture using a fork or hand mixer on the lowest setting.

Spoon mixture back into potato skins. Top with remaining cheese and bake at 375°F 20- 25 minutes or until potato is heated through and cheese is melted.

Top with BBQ chicken and any other toppings you desire. I added jalapenos for heat!
