In a medium bowl, combine shredded chicken and barbeque sauce. Set aside.
Spray a cast iron skillet with cooking spray and heat over medium-low heat. Lay one tortilla in the center of the pan. Spread about 1/4 cup of chicken on the tortilla and top with a sprinkling of red onion and pineapple. Top generously with shredded cheese. Lay another tortilla over the top and flatten with a spatula.
Cook for about 2 minutes per side or until crisp, golden brown and heated through. Repeat with the remaining tortillas and filling. Serve immediately.
