Description

Nachos made healthy by baking whole wheat and corn tortillas instead of chips. A perfect weekend dinner made in 30 minutes flat.

Ingredients

  • 10 whole Whole Wheat And Corn Tortillas, Cut Into 8 Pieces (resembling A Chip Size)
  • 1 cup Chicken, Cooked And Shredded
  • ½ cups BBQ Sauce (I Like Trader Joe's)
  • 1 cup Shredded Sharp Cheddar Cheese
  • 1 cup Shredded Pepper Jack Cheese
  • ½ cups Pickled Jalapeno Peppers, Sliced
  • 2 ears Corn, Roasted And Cut Off The Cob
  • ½ cups Cherry Tomatoes, Cut In Half
  • ½ cups Chopped Fresh Cilantro
  • ½ cups Purple Onions, Diced
  • ½ cups Green Onions, diced
  • ¼ cups Cotija Cheese, Crumbled
  • 1 whole Lime, Cut In Half

Preparation

Preheat oven to 425 F. On a rimmed baking sheet place tortilla pieces. Bake about 5 minutes, flip them over and bake 5-10 minutes more until crispy and golden.

Meanwhile, toss chicken with BBQ sauce in a bowl.

Remove tortilla chips from oven when they are done. On the same baking sheet assemble nachos by layering the ingredients. Pull half of the chips off of the tray. On the first layer of chips add a sprinkling of cheddar and pepper jack cheese, chicken, jalapenos and corn. Repeat layers: chips, cheese, chicken, jalapenos and corn.

Bake for 5 minutes until cheese is melted. Remove from oven and top with tomatoes, cilantro, onions, green onions and cojita cheese. Dollop some more BBQ sauce on top if desired and finally finish her off with a squeeze of fresh lime juice. Enjoy.
