Description

A simple grilled meat dish that you can prepare and grill in no time. This flavor combination will knock your socks off! Great for company.

Ingredients

  • 3 pieces Boneless, Skinless Chicken Breasts, Cut Into 3/4" Strips Lengthwise
  • 1 pound Thick Sliced, Hickory Bacon
  • Salt And Pepper, to taste
  • ¼ cups Barbecue Sauce

Preparation

1. Lay a strip of bacon flat and put one chicken strip on top of it, towards the end of the strip.

2. Begin rolling from the chicken end of the bacon, until you get to the other end, making chicken and bacon pinwheels.

3. Thread the wheel onto a skewer, making sure to secure the lose end of the bacon so the roll doesn’t open. Do this for the rest of the chicken and bacon. You can usually fit 4-5 wheels on each skewer if they are the long ones.

4. Lay skewers on a baking sheet and sprinkle both sides with salt and pepper. Refigerate until ready to grill.

5. Cook on medium to medium-high heat for about 9-10 minutes per side, keeping away from flames.

6. When finished cooking, turn heat to high and baste the skewers with barbecue sauce, turning often until you get a good grilled finish on the wheels. And you are done.

These were great! The bacon helped keep the chicken moist and it would be easy to assemble theses ahead of time for a bbq so you can enjoy your guests.
