Description

These Stuffed Chicken Breasts are a delightful spin on a standard Chicken Cordon Bleu. They have a creamy, cheesy center with a taste of bacon in each bite! I used all reduced fat cheese and turkey bacon so this option is a definite calorie saver!

Ingredients

  • 2 whole (about 12 Oz. Size) Large Chicken Breasts
  • 2 whole Triangles (3/4 Oz. Size) Laughing Cow Light Garlic & Herb Cheese
  • 8 slices Turkey Bacon, Uncooked
  • 4 slices 2% Muenster Cheese, Halved
  • ½ cups Your Favorite BBQ Sauce (I Use Sweet Baby Rays)
  • 2 slices 2% American Cheese, Halved

Preparation

Preheat oven to 400°F.

Butterfly chicken breasts by slicing the breast in half, starting at the thickest part of the breast. Once the breasts have been butterflied, slice it down the middle, making each breast into 2 pieces.

Spread a half of a triangle of Laughing Cow cheese on the top of the breasts. Fold 2 slices of bacon in half and place them on top of the Laughing Cow cheese layer. Top with a slice of Munster split in 2 pieces.

Bring both sides up to the center to form a roll and place in an oven safe baking dish with the seam down. Brush chicken rolls with generous amounts of BBQ sauce. Once your rolls are saucy, top them with a half a slice of American cheese.

Cover dish with foil and bake about 30 minutes. Uncover and continue to bake about 10-15 minutes longer until cheese is golden brown and inside temperature reads at least 170° F.
