Description

A tangy meatloaf with the addition of cheese. Was my favorite meal growing up!

Ingredients

  • FOR THE MEATLOAF:
  • 1 package (about 4 Oz. Sleeve) Ritz Crackers Or Generic Equivalent
  • 1 pound Ground Beef
  • ¾ cups Ketchup
  • 1 whole Egg
  • ¾ cups Shredded Mozzarella, Or Less As Needed
  • FOR THE SAUCE:
  • 1 cup Ketchup
  • ¾ cups Brown Sugar
  • ¼ cups Worcestershire Sauce
  • ½ cups Water

Preparation

Preheat oven to 350ºF.

Crush the roll of crackers until fine. Mix ground beef, ketchup, egg, and crackers together in a bowl. Press half the meat mixture in a standard loaf pan. Layer with shredded mozzarella cheese (between 1/2 and 3/4 cup) and then top with remaining meat mixture, spreading evenly.

For the sauce, combine all ingredients in a small saucepan and whisk. Over medium heat, bring to a boil, whisking frequently. Remove from heat.

Bake for 1 hour 15 minutes. After 30 minutes, remove from the oven and pour an even layer of sauce over the top (you won’t use all the sauce, just enough to cover the top) and return to the oven and continue cooking.

Serve with rice or mashed potatoes and your favorite green vegetable.

This was so easy — pulse the crackers a few times and you’re done most of the work — and everyone loved it. I would consider making on a baking pan next time to prevent the sauce from dripping in the oven, but I will make it again!
