Description

Chicken, red onions, cheese and BBQ sauce all in a quesadilla. Yum!

Ingredients

  • 8 whole Whole Wheat Tortillas
  • 1 cup Barbecue Sauce
  • 2 cups Chicken, Shredded
  • ¼ cups Red Onion, Thinly Sliced
  • 1 cup Cheddar Cheese, Shredded

Preparation

On each tortilla, spread 2 tablespoons of barbecue sauce. On the one half, add chicken, red onion and cheddar cheese. Fold over in half and place on a baking sheet. Continue until all 8 quesadillas are made.

Bake at 350 degrees for 10 minutes or until cheese is melted and tortillas are crispy. Let cool for 5 minutes and cut into 4 pieces.

Thanks for the comments Mark. My oven runs a little hot, so it’s probably closer to15 minutes. You should be able to flip them over half way through the baking too.

awesome flavor! I had not thought of using bbq sauce, it makes them kind of like a bbq chicken pizza (which is a good thing!). One thing I noticed, perhaps they needed to be in for longer but I found the bottom tortilla to be soggy from the cheese/bbq juice. I think either they should be flipped halfway (if possible) or perhaps pan-fried.
