This chicken recipe marries cumin, fresh basil, and mango juice to create a deliciously unique flavor that’s light and refreshing.
Start by heating the oil in a large frying pan. Add the chicken breasts and cook until golden brown, about 3-4 minutes on each side. Sprinkle the onion over top of the chicken breasts and pour in the mango juice. Mix well, letting the juice come to a boil. Reduce heat to medium-low. Sprinkle the cumin, basil, and salt over the top and stir well. Cover the pan and let the chicken cook about 4-6 minutes on each side. When chicken is done, squeeze the lime over the top and remove to dinner plates, leaving the sauce and onions in the pan. Increase heat to high and let sauce thicken while stirring constantly, about 2 minutes. Stir in fresh basil and drizzle sauce over top each chicken breast.
Serve with jasmine rice and slices of fresh mango.
