Description

Yummy roast using red wine and balsamic. REALLY good.

Ingredients

  • 3 pounds Chuck Roast
  • 8 ounces, weight Button Mushrooms, Sliced
  • 8 ounces, weight Baby Portabello Mushrooms, Sliced
  • 1 whole Sweet Onion, Chopped
  • 1 package (1 Oz. Packet) Dry Onion Soup Mix
  • ½ cups Red Wine (one You Would Drink)
  • ⅓ cups Balsamic Vinegar
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 pinch Dried Rosemary
  • 1 Tablespoon Olive Oil

Preparation

Season the roast with salt, pepper and rosemary on both sides. Sear over medium-high heat in the olive oil.

Add chopped onion to the bottom of your crock pot. Place the seared roast on top of the onions.

Put the soup mix on top of the roast, then pour on the red wine and balsamic.

Place the mushrooms on top and set your slow cooker to low. Let it go for 6-8 hours.

I served mine with crash hot potatoes and buttery rosemary rolls.

This was the first roast I’ve ever made or eaten (I’m a recovering vegetarian) and I was incredibly anxious about dealing with such a large hunk of meat. But, thanks to this recipe, I am adding this to the list of my go-to dinners. You can’t get easier, or more delicious than this. Thanks for sharing!!

This is yummy and really easy! I couldn’t find chuck roast but I used whatever kind of pot roast they had at the supermarket and it worked just fine. I was worried because it didn’t seem like very much liquid so I added a little more red wine and that worked fine. It was super tender and fell apart. My only complaint was that it was a little bit dry, but my friend I made it for disagreed so it was definitely good! I like it much better than a pot roast with carrots/celery/etc and it couldn’t have been easier to make – just sear the meat and throw everything in the crock pot!
