A simple and flavorful chicken dish perfect for a spring evening.
1. In a skillet over medium heat, combine chicken, balsamic vinegar and olive oil. Stir to coat the chicken and cook through.
2. Once the chicken is cooked, remove from the pan along with the leftover liquid and set aside.
3. Place peppers in the hot skillet. You want them to get charred around the edges but still keep a little crispiness.
4. When peppers start to blacken, add the chicken and liquid back into the skillet and stir to let the vinegar flavor the peppers, about one minute.
5. Remove from heat and serve over brown rice.

Made this for my girls and me, skipped the rice, because I forgot to buy it. None the less, great. Next time I’ll probably add some spices to the Chicken, Garlic and Thyme. All in all a good quick dish.

Had this the other night, very good! We enjoyed it very much. The peppers took a lot longer than expected to get that ‘charred around the edges’ look, but it was worth the wait. Thanks for sharing!

This is DELICIOUS and so fast and easy to make. My husband inhaled it! I will definitely be making this one again and again.
