Description

Comfort food made healthy!

Ingredients

  • 1-½ cup Quinoa, Uncooked
  • 3 cups Water
  • ⅛ teaspoons Salt
  • 8 ounces, weight Shredded Low-fat Sharp Cheddar Cheese
  • ⅔ cups Evaporated Milk Or Half And Half
  • 5 Tablespoons Smart Balance Original Butter Spread
  • ¼ cups Italian Seasoned Breadcrumbs

Preparation

Preheat oven to 350 F.

Place the quinoa in a mesh strainer and rinse with cold water for about 2 minutes. Place the quinoa, water and salt in a small saucepan and bring to a boil. Cover with a lid, reduce the heat, and simmer until cooked, about 20 to 25 minutes. Remove from heat and allow to cool just a bit.

In a large bowl, combine cooked quinoa, cheese, evaporated milk and butter spread. Pour into a 2-quart casserole dish and sprinkle breadcrumbs on top. Bake for 20 to 25 minutes, until cheese is bubbly and breadcrumbs have turned a golden brown. Serve warm.

Love this! We’re looking for ways to eat healthier without feeling deprived, and this was the first time I’ve made quinoa. It was great. Next time I will try using 2% or maybe even1% milk and see how it goes. Very simple and delicious.

Wow!!! This was REALLY good. I am not a HUGE fan of quinoa. I will eat it, it’s ok…not my favorite. until now. This was perfect. It’s filling, cheesy and you feel like you are eating something totally decadent and bad for you. Both the hubby and I loved it and it will be on regular rotation at our house. Hands down, my favorite way to eat quinoa. Thank you!

My boyfriend and I LOVE this recipe! For an occasional treat, we whip up a batch with whatever cheese we have on hand. I know we’ve tried it once with Swiss and once with Gouda. I use a little less Smart Balance and sub a lower amount of milk (fat free) and it comes out just fine. Last time I sprinkled nutritional yeast on top instead of bread crumbs. (We’re a pretty low-carb household.) It’s a great versatile recipe and we feel like we’re eating something really naughty and delicious, even though we’re not! Thanks for sharing!
