Rich, creamy, hearty soup just right for dreary evenings spent inside with loved ones.
In a large Dutch oven or stockpot, melt the butter over low heat. Stir in flour. Continue to heat and stir until smooth.
Gradually add milk, stirring constantly, until sauce has thickened. Add potatoes and scallions. Bring to a boil, stirring constantly.
Reduce heat and simmer for 10 minutes. Add cheese, bacon, and sour cream. Stir until cheese is melted. Season to taste with salt and pepper. Serve immediately.
