Description

Hot wings, baked and served with a creamy, herby, cheesy mashed potato.

Ingredients

  • 2 whole Chicken Wings, Drum And Wing Separated
  • ½ cups Frank's Red Hot Sauce
  • 3 whole Medium Red New Potatoes, Peeled And Diced
  • ½ teaspoons Minced Garlic
  • 1 teaspoon Minced Onion
  • 2 Tablespoons Unsalted Butter
  • ¼ cups Buttermilk
  • 1 Tablespoon Chopped Fresh Thyme
  • 1 pinch Grated Nutmeg
  • ¼ cups Freshly Grated Parmesan Cheese
  • 1 pinch Salt And Pepper, to taste
  • 1 dash Lemon Juice

Preparation

Begin by marinating the wings in Frank’s Red Hot sauce for at least 1 hour but preferably overnight.

Preheat the oven to 350 degrees F. Place the marinated wings on an aluminum or parchment lined baking sheet. Bake for approximately 20 minutes or until cooked through. Make sure to turn over the wings at the half way point. When done remove them from the oven and set aside.

Meanwhile boil the potatoes, minced garlic and onion in a pot of well salted water until potatoes are fork tender. This will probably take about 10-15 minutes depending on the size of the potatoes.

Drain the potatoes and return them to the pot. Add the butter, buttermilk, thyme, nutmeg and Parmesan and mash to desired consistency. Add salt and pepper to taste.

I like to squirt both the wings and the potatoes with a little bit of lemon juice. The acid helps to cut through the richness of the potatoes and gives a nice crisp finish to the wings. It’s optional, but really—do it.

I’m seriously drooling. I’m pregnant and this has been all I’ve been craving–hot wings! I came across this and about fell off my chair! I need to go fix this immediately! lol
