Description

The most flavorful fish with only a few ingredients.

Ingredients

  • 4 whole Tilapia Fillets
  • 2 Tablespoons Extra Virgin Olive Oil
  • 2 whole Lemons
  • ½ teaspoons Dried Oregano
  • 1 whole Large Tomato, Diced
  • ¼ whole Red Onion, Thinly Sliced
  • 1 whole Yellow Bell Pepper, 1/2" Sliced
  • Salt And Pepper, to taste
  • ¼ cups Feta Cheese

Preparation

Preheat oven to 350ºF.

Cut four 12″ panels of aluminum foil. Lay a tilapia fillet on each panel. Drizzle 1/2 a teaspoon of oil on each, followed by the juice of half a lemon and a sprinkling of dried oregano.

Chop vegetables accordingly and divide amongst each fillet. Salt and pepper to taste (but go light on the salt, because of the salty feta).

Enclose each fish in its own foil packet. Bake for 15 minutes. Once cooked through, top with feta cheese.

This was so easy and really really good! I used 8 pieces of fish and made them in a 9X13 pan instead of wrapping them individually. I also didn’t add the yellow pepper only because I didn’t have one. I will for sure be making this again!!!
