Super crunchy plus quick and easy!
Heat oven to 400 degrees F. Line a baking sheet with tinfoil and spray with nonstick cooking spray.
In a shallow dish mix the panko, grated cheese, parsley and salt and pepper together.
In another dish whisk eggs, dijon mustard and hot sauce.
Cut your chicken into strips, dry with a paper towel. Dip the strips in the egg mixture to coat, then dip into panko crumbs and press on to coat.
Place strips on prepared pan. Cook for 20-25 minutes until cooked through and brown.
Serve with your favorite dipping sauce.
