Description

These chicken nuggets are far better than their Mc__ competitor. The recipe can be doubled and frozen for a quick and easy dinner. My kids love to help assemble these, too.

Ingredients

  • 1-½ pound Boneless, Skinless Chicken Breasts
  • 1 cup Dry Bread Crumbs
  • ½ cups Grated Parmesan Cheese
  • ½ cups Shredded Mozzarella Cheese
  • 1 teaspoon Salt
  • 1 teaspoon Thyme
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Parsley
  • 1 teaspoon Garlic Powder
  • Fresh Ground Black Pepper
  • ½ cups Butter, Melted

Preparation

Preheat oven to 400 degrees.

Prepare chicken breasts by cutting into 1-1 1/2 inch pieces or to your liking. Remove any fat from chicken and pat chicken dry with paper towel. Set aside.

In a bowl, mix together all ingredients, except butter, until well combined.

Put melted butter in a separate dish (preferably shallow for dipping).

Make an assembly line and begin by dipping chicken in the melted butter, then coating in bread crumb mixture.

Transfer chicken to a lightly-greased wire rack. Continue with all chicken and sprinkle any remaining bread crumb mixture on prepared chicken pieces.

Bake for 20 minutes or until chicken is cooked throughout.

Note: The wire rack helps cook the bread crumb mixture all around the chicken to a nice crisp, keeping it from getting soggy. If a wire rack is not available, a cookie sheet can be used, turning the chicken half-way through cooking time.

I made these last night. They were really good. Mistakes I made were using ground thyme (could really taste it) and oiling the baking sheet. Otherwise, easy, kid friendly and yummy! Thanks!

These are sooo delicious! I based my recipe off yours (only had Parmesan on hand and already seasoned breadcrumbs leftover from Christmas). The kids (and their dad) were begging for more! Great work!

I made these tonight and they were great! The only change I made in the recipe was using homemade gluten free bread crumbs. Also, I used unsalted butter since there was plenty of salt in the bread crumb mixture.

Made these last night for the boyfriend and roommate… We couldn’t move afterwards! We ate ourselves past our stuffing zone! LOL! Very good. Only thing is I used a wire-rack and after the 20 mins the bottoms were still pretty buttery and soggy so i flipped them all and stuck them under the broiler for a few minutes to brown them up.

Not bad, but it takes about 40 minutes in prep time. And that’s just too much time to make chicken nuggets–especially ones that didn’t get much of a reaction from anyone at the dinner table.

These were really delicious…much more so than I expected them to be. Next time, I’ll leave out the extra salt because they were way saltier than I would have liked. Other than that, they were a big hit!

These were easy and delicious. My husband and I enjoyed them immensely. The breading is very versatile and can be used for many chicken dishes. The only change I made was I only melted 1/4 cup of butter instead of a whole cup.

These were absolutely fabulous! I didn’t have the basil, parsley, or oregano (I’m a boring cook, apparently) but they were delicious anyway. The butter really keeps them from getting dry while baking. I will definitely be using this recipe over and over! Thanks!
