Description

This is similar to Mama Holli’s “Sick Chicken.” It is fast and easy to throw together because of the boneless skinless chicken breasts, and the cheese and wine dress it up a little.

Ingredients

  • 8 pieces Boneless, Skinless Chicken Breasts, Full Size, Not Skinny Tenders
  • 8 slices Swiss Cheese
  • 1 can (10.75 Oz. Can) Cream Of Chicken Soup
  • ¾ cups Dry White Wine
  • ½ cups Melted Butter
  • 1 package (6 Oz. Package) Chicken-flavor Herb Stuffing Mix

Preparation

Spray a 13 x 9 x 2 dish with non-stick spray, and place the uncooked chicken breasts in the dish. Place a slice of cheese on each breast (feel free to use more cheese, if you like). Mix the soup and the wine with a whisk, and pour over the chicken and cheese. Spread stuffing evenly over the soup-wine mix. Pour melted butter over the stuffing. Cover with foil and bake at 350 degrees for 45 minutes, removing the foil towards the end so the stuffing browns. Sometimes I do it in reverse, starting it uncovered and then covering it about 20 minutes in, so the stuffing will steam a little.

Made without the cheese because I did not have it on hand. Was still very good. Made it ahead on the weekend and it was ready to pop in the oven after work…husband and son loved it.
