Description

Buffalo chicken tenders that you can feel better about eating.

Ingredients

  • ¼ cups White Whole Wheat Flour
  • 1 teaspoon Garlic Powder, Divided Use
  • ½ teaspoons Onion Powder, Divided Use
  • 1 teaspoon Cayenne Pepper, Divided
  • ½ teaspoons Salt, Divided
  • 4 whole Chicken Breast Halves, Cut Into Tender-like Strips
  • 2 whole Eggs, Beaten
  • 1 Tablespoon Buffalo Sauce (such As Texas Pete's) Plus Extra For Serving
  • 1-½ cup Panko Bread Crumbs

Preparation

Preheat oven to 400 F.

In a large Ziploc bag, place flour, 1/2 teaspoon garlic powder, 1/4 teaspoon onion powder, 1/2 teaspoon cayenne pepper and 1/4 teaspoon kosher salt. Add chicken tenders, seal bag and shake bag to coat.

In a separate shallow bowl, add eggs and buffalo sauce.

In another shallow bowl add panko and the remaining seasonings.

Prepare a baking sheet by lining it with foil. Place a cooling rack on top of the foil and spray with cooking spray.

Bread tenders by dipping each one in egg mixture, then in the panko mixture. Place on cooling rack. Repeat until all tenders are coated. Spray the tops lightly with cooking spray.

Bake at 400 F for 8-10 minutes (depending on size of strips). Flip the tenders with tongs and spray lightly again. Bake an additional 8-10 minutes, until cooked through.

Serve with more buffalo sauce and enjoy.
