Description

This is a fabulous budget-friendly dish that is super tasty! Step-by-step directions are included on related blog post.

Ingredients

  • 1 whole Onion, Chopped
  • 2 Tablespoons Extra Virgin Olive Oil
  • 4 Tablespoons Tomato Paste
  • 4 cloves Garlic, Minced
  • 3 cups Bean Water From Cooked Beans, Reserved
  • ¾ cups Brown Sugar
  • ¼ cups Molasses
  • 1 teaspoon Sea Salt
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Dijon Mustard
  • 1 Tablespoon White Wine Vinegar Or Apple Cider Vinegar
  • 1 pound Dried Great Northern Beans, Soaked And Cooked Until Soft
  • 1 pound Sausage (Like Linguica), Sliced

Preparation

In a large stock pot, saute onions in olive oil over medium-high heat. Add tomato paste and garlic. Continue to stir until tomato paste is evenly distributed with the onions. Add reserved bean water, brown sugar, molasses, sea salt, garlic powder, Dijon mustard and vinegar. Add cooked beans. Bring to a simmer turn pot to low and simmer for 2 hours minimum. Or at this point, everything can also be dumped into a crockpot and left on low for 8 hours.

Add sliced sausage, re-cover and cook 1 additional hour.

This was good but so much better the 2nd day. It was kinda thin and watery on the first but by the 2nd day it was thick and delicious. Will keep in my file and probably make again just making a few modifications such as adding a little bit of spicy bbq sauce to give it a little more kick.
