Description

Juicy pork meatballs made with spices, basil, garlic and onion placed in a baguette with a Sriracha-lime sauce and sliced veggies.

Ingredients

  • FOR THE MEATBALLS:
  • 2 pounds Ground Pork
  • 2 teaspoons Ground Pepper
  • 1 teaspoon Ground Cinnamon
  • 1 Tablespoon Sriracha Sauce
  • 2 teaspoons Ground Ginger
  • 4 cloves Garlic, Minced
  • ½ whole White Onion, Finely Chopped
  • 1 whole Lime, Juiced
  • ½ cups Basil, Roughly Chopped
  • 2 Tablespoons Hoisin Sauce
  • ½ Tablespoons Soy Sauce
  • FOR THE TOPPINGS:
  • 3 whole Jalapenos
  • 2 whole Carrots, Trimmed And Peeled
  • 1 cup Cilantro, Leaves Removed
  • 1-½ whole Fresh Baguettes
  • FOR THE SAUCE:
  • ¼ cups Plain Nonfat Greek Yogurt
  • 2 teaspoons Sriracha Sauce
  • ½ whole Lime, Juiced

Preparation

1. Preheat the oven to 400 F. Make the meatballs. In a large bowl, mix the meat with the spices, garlic, onion, lime juice, basil, Hoisin sauce and soy sauce until evenly distributed. Roll the mixture into 1 inch diameter meatballs. Place meatballs in multiple glass baking dishes, making sure the meatballs do not touch. Cook until done all the way through, about 20 minutes.
2. Meanwhile, prep the veggies. Remove the stem and seeds and thinly slice the jalapeno. Using a vegetable peeler, make thin ribbons out of the carrot.
3. Make the sauce. In a small bowl, mix yogurt with Sriracha and lime juice. Cut the baguette into about 6 inch pieces. Cut those pieces in half horizontally.
4. Plate the sandwich. Spread about 1 tablespoon of sauce on the cut sides of each baguette. Place slices of carrot, jalapeno and some cilantro on the inside bottom of baguette. Place 3 meatballs on top. Repeat for each sandwich. Serve and enjoy!

My husband (who is a BIG fan of spicy food) absolutely loved these. And he usually isn’t a big fan of pork. I’ll definitely be making them again! I’m a little less spice tolerant so I think I missed out on some of the nuances of the spices, might put less jalapeno on my sandwich next time.
