Description

This gluten-free, paleo main course is perfect if you are craving a hearty dinner. The garlic lime sauce that is drizzled over the pork gives it a fresh and delicious flavor.

Ingredients

  • 4 whole Thick Sliced, Boneless Pork Chops
  • 8 slices Bacon
  • ⅓ cups Extra Virgin Olive Oil, Plus More For The Pan
  • 1 whole Lime, Juiced
  • 2 cloves Garlic, Minced (more Or Less To Taste)
  • ½ teaspoons Red Pepper Flakes (more Or Less To Taste)
  • Salt And Pepper, to taste

Preparation

Preheat grill, or preheat grill pan over medium high heat (I used a grill pan) for about 10 minutes. While the pan is getting hot, lightly pat the pork chops with a paper towel so they are dry. Wrap 2 pieces of bacon around each of the pork chops, and secure with toothpicks. Then liberally season both sides of the chops with salt and pepper.

Add some olive oil to the pan, and place the pork chops in the grill pan. Let them cook on the first side for about 10 minutes without flipping. Then flip the chops and cook for another 8-10 minutes on the other side.

While the pork chops are cooking, whisk together the olive oil, lime juice, garlic, and red pepper flakes. When it is mixed well, add salt and pepper to taste. When the chops are finished cooking, drizzle the garlic lime sauce over top, and serve.
