Description

Thinly sliced pork chops stuffed with a bacon and breadcrumb mixture.

Ingredients

  • FOR THE STUFFING:
  • 2 Tablespoons Margarine
  • ¾ cups Breadcrumbs
  • 2 slices Turkey Bacon, Cooked And Crumbled
  • 1 Tablespoon Garlic, Minced
  • 1 teaspoon Cajun Seasoning
  • _____
  • FOR THE CHOPS:
  • 4 whole Boneless Pork Chops, Thinly Sliced
  • 1 teaspoon Cajun Seasoning
  • 1 teaspoon Chili Powder

Preparation

Preheat oven to 350 degrees.

In a small skillet or pan, combine stuffing ingredients. Cook over medium heat for a few minutes, until garlic is soft and breadcrumbs are moistened.

Sprinkle both sides of each pork chop with Cajun seasoning and chili powder. Place 2 Tablespoons of breadcrumb mixture in the center of each pork chops. Roll up and secure with a toothpick.

Place in a baking pan sprayed with cooking spray. Spray each pork chop roll with cooking spray. Cover with foil and bake for 45 minutes.

Pretty good. They weren’t very stuffed though a lot of mine fell out.

Quite tasty! I used 4 slices of regular bacon, and next time I would probably use only 1/2 cup of breadcrumbs. I would also probably pound the pork chops a little thinner next time. My husband really liked it!
