Description

Your family will love you forever when you make them Bacon Meatloaf. By adding minced bacon to the meatloaf, the bacon flavor is just a subtle surprise. Be sure to make extra, to put in the freezer.

Ingredients

  • 1 cup Onion, Diced Small, For 1 Cup You'll Need About 1/2 A Medium Onion
  • 4 slices Bacon, Chopped Fine
  • 2 cloves Garlic, Minced
  • 1 teaspoon Dried Thyme
  • ¼ teaspoons Ground All-spice
  • 1-½ pound Extra Lean Ground Beef
  • 1-½ cup Fresh Bread Crumbs
  • 3 Tablespoons Milk
  • 2 whole Eggs
  • 2 Tablespoons Ketchup
  • 1-½ teaspoon Mustard
  • 2 Tablespoons Barbecue Sauce
  • ½ teaspoons Salt
  • ½ teaspoons Pepper
  • 2 Tablespoons Ketchup, To Glaze The Top Of The Meatloaf

Preparation

1. Preheat oven to 375 F.
2. In a medium skillet over medium heat, sweat the onions, the bacon and the garlic.
3. When the onions are translucent and the bacon is cooked, but not crispy mix in the dried thyme and allspice. Remove skillet from the heat.
4. In a large bowl combine the ground beef and the remaining ingredients (except the last 2 tablespoons of ketchup) along with the cooked onions and bacon. Mix gently until the ingredients are thoroughly incorporated.
5. Put the mixture evenly into a loaf pan but do not pack it down.
6. Put pan into the oven for 30 minutes, then pull it out and spread 2 tablespoons of ketchup over the top. Then put it back into the oven and cook for another 30 to 45 minutes.

*If using individual-size loaf pans, spread the ketchup on the top of the meatloaves before putting the loaves into the oven. Then cook the individual loaves for 35 to 45 minutes.
