Description

Fried bacon in homemade mac-n-cheese.

Ingredients

  • 3 cups Uncooked Macaroni Noodles
  • ½ packages Bacon, Chopped
  • 2 Tablespoons Flour
  • 2 cups Milk
  • ⅓ cups Parmesan Cheese, Grated
  • 2 cups Sharp Cheddar Cheese, Shredded And Divided

Preparation

Preheat the oven for 350°F

Cook macaroni as the package directs. Cook bacon in large saucepan. Remove bacon saving drippings in pan.

Add flour to bacon drippings. Cook and stir until it browns a bit and is bubbling. Gradually stir in milk. Bring to a boil, stirring constantly. Cook and stir until it starts to thicken, about 3-5 minutes.

Stir in the Parmesan and 1 cup of the Cheddar. Cook and stir until melted. Mix in bacon and macaroni.

Pour into 1-1/2 qt. casserole dish and top with remaining Cheddar. Bake for 20 minutes.

This sounds wonderful! I recently had some bacon mac & cheese at a local restaurant, can’t wait to make it myself!

I made this last night along with Chocolate Molten Lava Cakes (yum) and it was a perfect meal! Next time I make this I will probably tweak a few things. I probably won’t use half a package of bacon, even my bacon loving boyfriend said it was a bit much. I will (try) not to burn the bacon and I will not leave all the bacon drippings in the pan because after it baked I had to drain off grease that had built up in the corners of the baking pan…yuck. Instead of the parmesan I added pepper jack cheese, and next time I will probably add more than 1/3 of a cup because we really couldn’t taste it and I think it would be delicious with a bit of a bite!

I made this for my friend and her bacon loving boyfriend after they brought their newborn home from the hospital. What a hit! Nice, smoky flavor and the crispy bacon pieces are a nice contrast to the creamy mac and cheese. Next time I might try smoked gouda in place of the parmesean to add to the smokiness of this dish.
