Description

You think you don’t like meatloaf, but trust me, you do! This tastes like a giant cheeseburger in a pan. Who needs a bun?

Ingredients

  • FOR THE MEATLOAF:
  • 1 pound Ground Beef
  • 5 slices Bacon, Cooked And Crumbled
  • 2  Eggs, Beaten
  • ½ cups Bread Crumbs
  • 8 ounces, weight Cheddar, Shredded
  • ¼ cups Mayonnaise
  • ¼ cups Ketchup
  • 2 Tablespoons Dill Pickle Relish
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper
  • 1 teaspoon Dry Mustard
  • 2 Tablespoons Minced Onion
  • FOR THE TOPPING:
  • ¼ cups Ketchup
  • 1 can (3 Oz. Can) French Fried Onions

Preparation

Preheat oven to 350ºF. In a large bowl, combine all the meatloaf ingredients. Press into a loaf pan, top with ketchup and bake 40 minutes. Top with French fried onions and bake another 15 minutes or until meat is no longer pink.

Paula does make one but I don’t like mustard on my burgers. So I used dry mustard instead yellow mustard – and I added the relish.

This is an easy recipe that taste fabulous too! I think it’s so much better the second day. Next time I’ll make this ahead and then refrigerate. Think I’ll make two so there’ll be leftovers for sandwiches.
