Description

My oldest son loves bacon cheeseburgers and this was a huge hit!

Ingredients

  • 2 pounds Ground Beef
  • 2 whole Eggs, Beaten
  • ½ cups Bread Crumbs
  • ½ cups Mayonnaise
  • ⅛ cups Worcestershire Sauce
  • 2 cups Shredded Sharp Cheddar Cheese
  • 2 cups Ketchup, Divided
  • 1 cup Yellow Mustard, Divided
  • 1 package (3 Oz. Package) Real Bacon Bits
  • ½ cups Packed Brown Sugar
  • 2 cups French Fried Onions

Preparation

Preheat oven to 350 F. Spray a muffin tin with nonstick cooking spray. In a large bowl, combine meat with eggs, bread crumbs, mayonnaise, Worcestershire sauce, cheese, 1 cup ketchup, 1/2 cup mustard, bacon bits. Mix well. (I use my hands to mix the ingredients.) Spoon into prepared muffin tin.

Mix the remaining 1 cup ketchup, 1/2 cup mustard, and brown sugar in a small bowl. Spoon and spread over the top of the meatloaf muffins. Place muffin tin on a baking sheet, and bake for 30 minutes. Five minutes before they are done, add French fried onions, watching to make sure the onions don’t burn.

Mine never seem done after 30 minutes! And b/c of all the mixings–I can’t go by color. It just seems so mushy still. Is this ok?

I really wanted to like these, but after following the recipe as written, I wound up with 12 blogs of mush. I baked them for 30 minutes and the insides were still raw. I put them back in for another 20 minutes and the tops burnt, but the inside were still mush. I wound up scraping them out of the muffin tin and plopping them into a 9×9 baking dish and making a regular meatloaf out of them. It’s a shame because they tasted really good.
