Description

Need to use up your leftover grilled pork, chicken or beef? Make Avocado Tacos!

Ingredients

  • 2 whole Avocados
  • 1 whole Lime, Halved
  • 1 cup Leftover Grilled Pork, Chicken Or Beef, Cut Into Bite-sized Chunks
  • 4 whole Corn Tortillas
  • 1 pinch Kosher Salt, Or To Taste
  • 1 pinch Freshly Ground Black Pepper, Or To Taste
  • ½ cups Grated Cheese Of Your Choice, Optional

Preparation

Peel, pit and slice the avocadoes. Place the slices in a small bowl and drizzle them with a squeeze of fresh lime juice. (This prevents the avocadoes from darkening.) Set aside.

Slice leftover grilled meat into bite-sized chunks and place in a heatproof dish. Microwave (covered with a paper towel) on 50% power for a minute or two until the meat is warmed.

Heat the tortillas per package instructions in the microwave or on a hot griddle.

Layer each tortilla with avocado slices and warmed meat. Drizzle with a bit more lime juice and sprinkle with salt and pepper to taste. If desired, top with grated cheese.

These are simple, fresh and fantastic!
