Ingredients

  • 1 whole Pizza Dough, 14 Inch Pizza Size - Make Your Own, Or Grab Some Premade! Trader Joe's Whole Wheat Is My Favorite.
  • 1 Tablespoon Olive Oil
  • Salt And Pepper
  • 2 Tablespoons Grated Parmesan Cheese
  • 1 whole Avocado, Peeled And Pitted
  • ½ heads Garlic, Roasted At 400F For 30 Minutes Until Soft
  • 3 cups Arugula
  • 4 ounces, weight Sliced Fresh Mozzarella
  • ½ cups Grape Tomatoes, Halved
  • ¼ cups Toasted Slivered Almonds
  • ¼ cups Chopped Fresh Cilantro (optional)

Preparation

Preheat the oven to 425 F. Stretch the pizza dough over a pizza pan or baking sheet. Brush with the olive oil and sprinkle with salt and pepper. Bake the pizza crust for 10 minutes.

Meanwhile, make the avocado “sauce.” Combine the parmesan, half the avocado, and the roasted garlic in a bowl. Mash with a fork. Taste, and add salt and pepper to your preference.

Dice the other half of the avocado and set it aside.

When it’s done, remove the pizza dough from the oven, and spread with the avocado mixture. Top with 2 cups of the arugula, then the mozzarella slices.

Arrange the tomatoes cut side up over the pizza, then top with the almonds and remaining diced avocado.

Bake the pizza for 10-15 minutes until the cheese is bubbly and the crust is cooked through. Remove pan from the oven and set it on a rack.

Let pizza rest for 5-10 minutes, then top with the remaining arugula and cilantro, if using. Cut into slices and DIG IN.

The avocado/roasted garlic combo is … incredible. You must try this.
