Avocado and feta cheese appear in several salad dishes. So, I assumed they would get along well like good friends. By that I mean – the 2 flavors are able to incorporate well. I’m satisfied with the dish and I hope you will be! The ingredients I put together might not make any sense in the world to some people but it tastes good! Creamy rice and grilled chicken rock my world.
Directions for the avocado creamy sauce
1) Add ginger and cilantro into a food processor. Pulse 5 times until they are finely chopped
2) Add avocado, lime juice, coconut milk, feta and Parmesan cheese; blend until they are mixed
3) Add spices-cumin, chili powder, paprika, cayenne pepper, garlic powder, and salt; pulse 5 times.
4) Taste and add additional seasonings to your preference.
Direction for sesame ginger grilled chicken:
This is real simple! I save time by buying ready-to-use sesame ginger dressing for marinating the meats as shown in the photo. This marinade/dressing is one of my favorites. I picked this dressing because I like to have an Asian touch and it will tie in well with the creamy sauce that contains ginger.
1) Marinate chicken breast fillets for at least 4 hours or overnight.
2) Grill at 375 F heat for 10-15 minutes until it’s cooked through, or to your desired degree of doneness.
3) When it’s about done, brush the leftover marinade on both sides of chicken. Cook for a few minutes longer and turn off the grill.
4) Let the cooked chicken rest for about 10 minutes before cutting
Directions for steamed rice:
1) If you have a rice cooker, this would be simple. Rinse the rice with water just to get rid of the starch.
2) The ratio of rice to water is always 1:1. If you have 4 cups of rice, then you will need 4 cups of water. Add water and rice to a rice cooker and turn it to “on”. After it’s cooked, let it sit for a few minutes before opening the lid.
3) If you don’t have a rice cooker, you can simply use a medium sauce pan, and simmer it with a lid on for 25-30 minutes or so. After it’s cooked, turn off the heat and let it sit for a few minutes before opening a lid
How to assemble:
1) Mix 1 cup of cooked steamed rice with 1/4 cup of the avocado sauce in separate bowl. Mix well until the sauce and rice are well incorporated
2) Place the mixed riced on a serving plate/bowl, add the chicken on top
3) Garnish with Feta cheese and cilantro if you wish.

Hmm..soy milk or almond milk wouldn’t work well because they are too liquidy. However, you could substitute with cream milk, or heavy cream

would almond milk or soy milk work for the coconut milk (or would that alter the taste dramatically)??
Not a fan of coconut or it’s milk, but the recipe sounds awesome!
