Description

A little bit of spice and a little bit of sweet.

Ingredients

  • 1 pound Shrimp, Shelled And Deviened
  • 3 Tablespoons Soy Sauce, Lite Or Low Sodium
  • ¼ cups Honey
  • 1 Tablespoon Finely Chopped Cilantro
  • 2 whole Jalapenos
  • 4 cloves Garlic
  • 1 Tablespoon Grated Ginger
  • ½ cans (20 Oz. Can) Pineapple Chunks

Preparation

Notes: I used a package of frozen raw shrimp and about half a large can of pineapple chunks. I normally buy the larger shrimp, but the smaller ones were on sale. If you have the funds for fresh, that’s always better. I also scooped out all the seeds from the jalapenos but it took away a lot of the spice. If you are more daring than me, put it all in there.

Mix all the ingredients together (except the pineapple) in a large bowl with the shrimp. Add to a skillet over medium to low heat. Cook the shrimp until they just turn pink. Then add the pineapple and simmer for another minute or two. Don’t overcook the shrimp or they will be tough and rubbery.

It tasted really yummy on some brown rice but I could also see putting them on skewers and throwing them on the grill!
