Description

Artichoke, spinach and feta cheese make up this delicious lasagna.

Ingredients

  • 9 pieces Uncooked Lasagna Noodles
  • 1 whole Chopped Onion
  • 4 cloves Chopped Garlic
  • 1 can (14.5 Ounce)vegetable Or Chicken Broth
  • 1 Tablespoon Chopped Fresh Rosemary
  • 1 jar (14 Oz. Size) Marinated Artichoke Hearts, Drained And Chopped
  • 1 package (10 Ounce) Frozen Chopped Spinach, Thawed, Drained And Squeezed Dry
  • 1 jar (28 Ounce) Tomato Pasta Sauce
  • 3 cups Shredded Mozzarella Cheese, Divided
  • 1 package (4 Ounce) Package Herb And Garlic Feta, Crumbled

Preparation

Preheat oven to 350 degrees F. Spray a 9×13 inch baking dish with cooking spray.

Spray a large skillet with cooking spray and heat on medium-high. Saute onion and garlic for 3 minutes, or until onion is tender-crisp. Stir in broth and rosemary; bring to a boil. Stir in artichoke hearts and spinach; reduce heat, cover and simmer 5 minutes. Stir in pasta sauce.

Spread 1/4 of the artichoke mixture in the bottom of the prepared baking dish; top with 3 uncooked noodles. Sprinkle 3/4 cup mozzarella cheese over noodles. Repeat layers 2 more times, ending with artichoke mixture and mozzarella cheese. Sprinkle crumbled feta on top.

Bake, covered, for 40 minutes. Uncover, and bake 15 minutes more, or until hot and bubbly. Let stand 15 minutes before cutting.

Such a great recipe. I was leery of the feta topping, but it adds a great tang!

This lasagna is one of my husband’s favorites. I fed it to my meat-eating family last thanksgiving and they didn’t even miss the meat!

Okay, everyone, if you like lasagna, this is a must! So easy to make yet so gourmet in taste and appearance. This lasagna was a huge, huge hit tonight at the dinner table, and my husband must have eaten half the pan in one sitting.

I added 8 oz. of mild Italian sausage as I was cooking the onion and garlic, but otherwise adhered to the recipe exactly. Bon Appetit !
