Description

A deliciously easy weeknight meal.

Ingredients

  • 2 Tablespoons Butter
  • 3 cloves Garlic
  • 3 whole Chicken Breasts, Cubed
  • 2 teaspoons Cumin
  • 2 teaspoons Coriander
  • 1-½ teaspoon Turmeric
  • 1 whole Onion, Chopped
  • 1 whole Pepper, Chopped
  • 1 can (4.5 Oz. Can) Diced Green Chiles
  • 1 can (14.5 Oz. Can) Diced Tomatoes
  • 4 cups Chicken Broth
  • 1 cup Uncooked White Basmati Rice
  • 1 teaspoon Chili Powder
  • ½ teaspoons Salt
  • ½ teaspoons Onion Powder
  • ½ cups Shredded Cheddar Cheese

Preparation

Start out by heating up a large pan on medium heat and melting your butter. Add in your garlic and give it a minute or two to cook up.

Sprinkle your chicken with about 1 teaspoon of the cumin, coriander, and turmeric. Throw it in the pan and cook it up.

Once your chicken is fully cooked, go ahead and add in your diced onion and pepper.

Cook it all up for about 3 to 4 minutes. Add in your chiles and tomatoes.

Swirl it around once or twice and add in your broth. Now add in your rice.

Finally, add in the chili powder, the remaining cumin, coriander, and turmeric, the salt, and the onion powder.

Bring the pot to a boil and then turn down the heat to low and cover. Simmer the mixture for about 20 minutes or until the liquid is absorbed and the rice is cooked through.

Grab your shredded cheese and spread it across the top of the chicken mixture. Cover for another minute or two and allow your cheese to melt completely.

Try leaving the pot uncovered. I just looked back at my original recipe notes and I think I added to cover the pot when it should remain uncovered. Glad you enjoyed it!

I have to come back to this recipe and revise my review of it. I have been making this one over and over since I first tried it out, and everyone LOVES it. It’s great for casual get-togethers or potlucks because it’s simple and inexpensive. Who doesn’t love a one-pot meal? Just make sure to simmer uncovered to prevent the issue I had the first time around, and it’s a winner.

Original Review:
“I tried this recipe, and my husband absolutely loved it. I added a teaspoon of curry powder, and I think it kicked up the flavor even more. My one criticism is that I ended up with too much liquid – almost a stew consistency. I will cut the amount of broth I add by about a cup next time. That said, I probably will be making this a lot in the future because it has great flavor.”
