Description

Stuff chicken breasts with apple and feta before rolling them in breadcrumbs and baking until golden.

Ingredients

  • 1  Granny Smith Apple
  • ¼ cups Crumbled Feta
  • ½ cups Bread Crumbs
  • 4  Boneless, Skinless Chicken Breasts
  • 2  Eggs
  • 2 teaspoons Thyme
  • Salt And Pepper, to taste

Preparation

Preheat oven to 350 F. Prep an 8×8 baking dish (or a dish that’s large enough to fit all of your chicken breasts in a single layer) by spraying it with non-stick spray.

Core and chop the apple and prepare filling by combining apple, feta and 1 tablespoon of breadcrumbs in a bowl.

Pound chicken breasts to 1-inch thickness and lay them flat on your work surface. Season with salt and pepper. Place a few tablespoons of filling in the center of each piece. Be sure to not over-stuff. Roll up the chicken breasts. You can use toothpicks to keep the chicken and stuffing together.

Prepare your dredging bowls. Put the whisked egg in one shallow bowl and put the remaining breadcrumbs, thyme and a dash of salt and pepper in another. Dip rolled chicken in egg and then in the breadcrumb mixture.

Place chicken seam side down in prepared baking dish. Bake for 25 minutes, or until chicken is cooked through and breadcrumbs are golden. Enjoy!
