Description

It’s day two of ”7 Irish Inspired Recipes.” Here’s an extra-easy All Day Slow-Cooker Corned Beef and Cabbage recipe.

From what I was told by my Irish friends, they rarely eat corned beef. Generally it’s ham and cabbage but somehow over here in America we’ve adapted the tradition of corned beef and cabbage. I’m definitely not complaining. I love corned beef.

Ingredients

  • ½  Head Cabbage
  • 1  Medium Onion
  • 1 cup Baby Carrots
  • 4 pounds Corned Beef Brisket (including The Seasoning Packet)
  • 2 cups Beef Broth

Preparation

Loosely chop cabbage and place it in the bottom of a slow cooker. Dice onion and add it to the cooker as well. Throw in a few baby carrots. Set corned beef on top of veggie mixture.

Pour 1-2 cups of broth over the beef and veggies.

Season brisket with the seasoning packet that came packaged in the brisket.

Set slow cooker to low and let it cook 8-10 hours or until tender.

Once brisket is tender remove from the crockpot and let rest for at least 5 minutes before serving.

With a slotted spoon remove cabbage, onion and carrot mixture from the broth. Put the corned beef on a cutting board and slice.

Plate it up. Enjoy!!
