Description

A very healthy, tasty, and quick stir-fry of almonds and broccoli. Delicious with rice or noodles.

Ingredients

  • 3 cloves Garlic
  • 1 whole Onion
  • 1 head Broccoli
  • 2 dashes Sunflower Oil (or Your Preferred Cooking Oil)
  • 2 dashes Light Soy Sauce
  • 1 pinch Palm Sugar Or Brown Sugar (optional)
  • 2 dashes White Wine (optional)
  • 1 cup Almonds, Slivered
  • 1 dash Dark Soy Sauce
  • 2 pinches Freshly Crushed Black Peppercorn

Preparation

Trim, peel, and roughly chop up about 3 cloves of garlic.

Trim, peel, and roughly chop up an onion.

Cut the broccoli florets from the base of their stalk. If the florets are thick, slice them in half.

Heat up a couple splashes of cooking oil in a wok or deep frying pan over medium high heat.

Once the oil is hot, add the garlic and onions. After less than a minute the garlic and onions should start to turn a slight brown (make sure they don’t burn). Add the broccoli and a couple splashes of light soy sauce.

Cook for about two minutes. Constantly stir to ensure even cooking and to prevent burning.

I like to add a tiny bit of palm sugar (a healthy low GI sugar) but this is optional.

Also add a splash of white wine to give it moisture – again this is optional.

Add your cup of almonds and a small splash of dark soy sauce. Add a couple twists of freshly crushed black peppercorn.

Give it all a good stir. Have a quick taste to see if it needs a little more light soy sauce or not.

Your superfood stir-fry is now ready to be enjoyed.
