Description

Fall has landed in granola form.

Ingredients

  • 1-½ cup Rolled Oats
  • ¼ cups White Whole Wheat Flour
  • 1-½ cup Organic Wheat Puffed Cereal
  • ½ cups Honey Roasted Almonds, Chopped
  • ¼ cups Peanuts, Chopped
  • 1 teaspoon Pumpkin Pie Spice
  • 1 teaspoon Cinnamon
  • ⅔ cups Pumpkin Puree Plus Extra If It's Too Dry
  • ½ cups Honey
  • ¼ cups Brown Sugar
  • 5 whole Figs, Stems Removed & Chopped

Preparation

Preheat oven to 350 F.

In a bowl, combine oats, flour, puffed cereal, almonds, peanuts, pumpkin pie spice and cinnamon, and stir to combine.

In a separate bowl combine pumpkin puree, honey and sugar.

Add the pumpkin mix into the oat mixture and stir with a spoon to break it up and create a “dough,” mixing it in as much as you can for at least 5 minutes.

Mix in more pumpkin if dough is too dry. Fold in fig pieces.

Spray a 9 x 13 inch baking dish with non-stick spray and press the dough into the pan. Bake for 20-25 minutes or until the top is golden brown.

Remove it from the oven and let it cool thoroughly. Then store it in an airtight container. I kept mine in the fridge, this way it will keep longer.
