Description

Use an immersion blender to whip this up in about 10 minutes with easy clean-up!

Ingredients

  • 2 whole Egg Yolks, Free-range If Possible (use 3 Or 4 If Your Eggs Are Small)
  • ½ teaspoons Mustard
  • 2 Tablespoons Lemon Juice
  • 1-½ Tablespoon Balsamic Vinegar
  • ¾ teaspoons Salt
  • ¾ cups Extra-virgin Olive Oil (Grapeseed Would Be A Good Neutral-flavored Oil To Use If You Don't Like Olive Oil)

Preparation

In a medium-sized bowl (or a large plastic cup) combine all the ingredients except for the oil. Insert an immersion blender and give it a quick buzz until it’s creamy. Still continue to blend as you add the oil in a slow drizzle. The mixture should thicken after a minute or two. If you’re using a cup, use up-and-down motions to bring the emulsion together.

Adjust seasonings if necessary and store in an airtight container for 2 weeks.

Makes about 1 cup.

Note: Grapeseed oil would also be a good choice if you wanted a more neutral-tasting oil.

I’ll be the first to admit that I am NOT a mayo fan, but I wanted a healthier option for mayo when I started making homemade ranch dressing for my kids. I liked that this recipe uses olive oil but was still unsure – I mean it has balsamic vinegar and mustard… those are very strong tasting additions! But I tried it and I have been very happy with the results! It does not have an overpowering balsamic/mustard flavor like I expected. The emulsion worked great with my immersion blender (it was a little runny at first but firmed up nicely in the fridge) and my kids (ages 2 and 4) love the ranch dressing made with it. Give it a try – it’s worth it!
