In a large bowl, mix together (using a spatula) the carrots, banana, applesauce, and peanut butter. Mix until well blended.
Slowly add in the oats, whole wheat flour, and all-purpose flour. Mix until you form a dough. Add more flour if needed.
Lightly flour a work surface and roll out your dough until until you reach 1/4 inch in thickness. Use a cookie cutter or knife to cut into shapes.
Line the cut out pieces onto a cooking sheet lined with parchment and bake at 350 degrees (Fahrenheit) for 30 minutes or until golden and crisp.
