Here is a recipe for a healthier homemade butter spread. I do not use margarine or tub margarines. I read an article about a man who left a pat of margarine on his window sill to see what would happen. After two years, it just got dusty. It didn’t rot and no bugs infested it. I think it is because margarine isn’t actually food. So here is a recipe that combines the natural healthy properties of butter and olive oil.
1. Soften butter at room temperature.
2. Blend butter and olive oil at medium speed until well combined.
3. Salt to taste.
4. At this point, the mixture will seem a little runny. Refrigerate until it reaches a spreadable consistency.
Tip: This spread is of course great on bread. My family also uses it on baked potatoes.

I’m definitely going to try this! My hubby uses Olivio, but I’d much rather make my own. That’s gross about the margarine on the windowsill!
