Run the cocoa powder through a sifter to remove any lumps. Add to a medium sauce pan with the water and whisk over medium heat to incorporate. Add in the sugar and stir to dissolve. Bring to a rolling boil over medium heat and stir like your life depends on it … ok, like your clean kitchen depends on it for 3 minutes. Remove the pan from the heat and stir in the salt and vanilla.
Allow the syrup to cool before transferring it to a clean glass jar. Store in your fridge, it’ll keep for several months.
Alternatively, you can add in a small amount of mint extract for a chocolate-mint syrup.
