Description

My husband dubbed these “lynnola bars” after me. These are his favorite and his daily morning snack!

Ingredients

  • 1 cup Brown Sugar
  • 2 Tablespoons Canola Oil
  • ½ cups Honey
  • 4 cups Quick Cook Oats
  • 1-½ cup Dried Fruit (I Use Raisins)
  • 1-½ cup Peanuts
  • 1 teaspoon Cinnamon
  • 1 dash Salt (if Peanuts Are Salted, Omit This!)
  • 2 whole Eggs, Beaten
  • 1 teaspoon Vanilla

Preparation

Preheat oven to 350F.

Mix brown sugar, oil, and honey in a small bowl and microwave 15-20 seconds. This will help combine everything easily. Set aside.

Combine oats, dried fruit, nuts, cinnamon and salt in a large bowl. Stir sugar mixture into oat mixture. Mix well. Add in eggs and vanilla and stir until well combined.

Spray a large rimmed baking sheet (mine is 12×17 with edges on all 4 sides). Dump mixture onto baking sheet and spread evenly. Press mixture firmly. It should be compact and even. I use a sheet of parchment or wax paper to help with this step.

Bake 17-20 minutes. Keep an eye on them towards the end. The edges should turn brown and the top should look golden. Remove from oven and allow to cool completely. Cut into 21 bars (3 rows and 7 columns).

Put each bar into a snack-sized Ziploc baggie. I usually keep a week’s worth in the pantry at all times and the rest in the freezer. Enjoy!
