Description

Crispy bacon glazed with brown sugar atop a juicy beef burger patty bathed in a creamy, rich, blue cheese caramelized onion sauce.

Ingredients

  • 2 Tablespoons Butter
  • 1  Red Onion, Sliced
  • Salt And Pepper
  • 3 Tablespoons Brown Sugar
  • 8 slices Bacon
  • 3 Tablespoons Milk
  • 2 ounces, weight Blue Cheese, Crumbled
  • 4  Burger Patties
  • 4  Burger Buns
  • Arugula Or Other Lettuce (optional)

Preparation

In a small saucepan, melt butter. Add onions and a small pinch of salt. Stir to coat in butter. Without disturbing the onions, sauté for 5 minutes, uncovered. After 5 minutes, stir and cover. Lower heat to medium-low and sauté for 3 minutes and stir, repeating until onions are fully caramelized, about 15–20 minutes.

While onions are caramelizing, on a foil-lined baking pan, sprinkle brown sugar evenly over bacon. Place baking pan in a cold oven and set temperature to 400ºF. Remove bacon when it has reached desired crispness, about 17–19 minutes.

After onions have caramelized, stir in milk and bring mixture to a gentle simmer. Simmer for 2–3 minutes, while stirring. Stir in blue cheese and simmer until thickened, as desired.

Grill burger patties as desired. Assemble burgers with patties, sauce, bacon, and lettuce.

WOW WOW WOW. My husband and I both devoured these, barely came up for air. The bleu cheese and the brown sugar bacon add a sophisticated gastropub flair to the humble burger.

These were great! The sautéed onions plus the brown sugar bacon gave these hamburgers the best flavor. I dislike blue cheese so I left that out and put on a thin slice of velveta instead. When I made the hamburger patties I added garlic powder, onion powder and hickory smoke flavoring. One of the best hamburgers I’ve had.
