Description

Chunky potatoes, not pureed, with just the right amount of sweetness and a delicious crunchy topping.

Ingredients

  • FOR THE POTATOES:
  • 5  Sweet Potatoes
  • ½ cups Brown Sugar
  • ¼ cups Half-and-half
  • 2 whole Eggs, Beaten
  • 2 Tablespoons Cold Butter Cubed
  • 1 teaspoon Vanilla Extract
  • FOR THE TOPPING:
  • ½ cups Brown Sugar
  • ⅓ cups Flour
  • 2 Tablespoons Butter
  • ½ cups Chopped Pecans
  • ¾ cups Mini-marshmallows (optional)

Preparation

Bake potatoes in preheated oven at 375F for 1 hour. Allow potatoes to cool, then peel and dice them. Combine sweet potatoes, sugar, half and half, eggs, 2 Tablespoons butter and vanilla. Break up gently with a wooden spoon and mix… But do not totally smash them. Pour mixture into a shallow 2-quart baking dish.

To make the topping, combine brown sugar and flour. Cut in 2 Tablespoons of butter until mixture resembles coarse crumbs. Stir in pecan pieces and then sprinkle mixture over potatoes.

Bake uncovered at 350 degrees for about 20 minutes until set. If desired, top with mini marshmallows and allow to bake for an additional 5 minutes.

Made this for the first time today. It was excellent and everyone just loved it. Easy too. A couple of tips…it is very sweet, like dessert. Also, one of my sweet potatoes was fairly large and did not get done in the hour given. Next time I will pick smaller potatoes. Thanks for sharing the recipe.
