Description

I didn’t like sweet potatoes until I tried this. Now I love them, and I have to make this dish at least twice a year (Thanksgiving and Christmas).

Ingredients

  • 4 Medium Sweet Potatoes
  • 1 can Sweetened, Condensed Milk
  • 1 cup Pecans, Chopped
  • 1 teaspoon Cinnamon
  • 1 teaspoon Ground All-spice
  • 1 Medium Egg
  • Marshmallows (optional)

Preparation

Boil sweet potatoes. *Heat enough salted water to cover potatoes, using 1/2 tsp salt to 1 cup water, to boiling, and boil until tender (about 30 minutes or so).* Drain potatoes, and slip off skins.

Preheat oven to 350°.

Mix all ingredients with mixer, including potatoes.

Cook for 25 minutes, cover with marshmallows if desired, and cook until mallows are browned and melted (about 5 minutes).
