Description

These are a favorite Christmas cookie in our house. I love how simple the ingredients are and how they are buttery with a crumbly texture. These are perfect with a cup of hot cocoa or coffee. Russian tea cakes also hold there shape well when packaged and shipped. I have been making this recipe since I was in middle school, it is the oldest recipe I own and I still love making these for the holidays! I usually double the recipe and it turns out fine to do so.

Ingredients

  • 1 cup Butter, Softened
  • ½ cups Powdered Sugar
  • 1-½ teaspoon Vanilla
  • 2 cups Flour
  • ½ cups Nuts, Chopped (Like Walnuts Or Pecans)
  • ½ cups Powdered Sugar, Set Aside For Dusting

Preparation

Preheat oven to 350 degrees F.

Cream butter, sugar and vanilla until smooth and fully incorporated. Add flour and nuts, beat until fully incorporated and smooth.

Drop dough by tablespoon, roll into balls or use a cookie scoop and drop onto an ungreased cookie sheet. Bake for 12 minutes or until no longer soft when top is touched. Allow to cool on the cookie sheet.

Dust with powdered sugar using a sieve and store in a sealed storage container.

When I was growing up my mother called these “sand tarts” or “Sandies”. It’s not christmas till these are made.

Growing up one of our neighbors always brought us these at Christmas time – they were always one of my favorite cookies! But no one in my family had a recipe and we moved away from said neighbor before I started collecting recipes. I’d completely forgotten (ish) about them until I saw this while browsing a few weeks ago and promptly put them on my baking list for Christmas. They are every bit as delicious as I remember them being!

Although the cookie has a nice flavor, I found it to be a little dry.

These are very easy to make. These disappeared quickly at the office Christmas party. I think they taste great!
