Description

You can tell the holiday season is fast approaching when fresh cranberries begin making their appearance in the refrigerated section of the grocery stores. Cranberries are one of the most beautiful and healthy fruits out there- wonderfully tart and juicy, they require minimal preparation. Try this vibrant compote as an elegant and perfectly sweet holiday side, or poured over pancakes or as a topper on cottage cheese.

Ingredients

  • 1 cup Water
  • 1 cup Granulated Sugar
  • 1 Tablespoon Orange Zest
  • 2 Tablespoons Fresh Squeezed Orange Juice
  • 2 bags Fresh, Whole Cranberries (12 Ounces Each)
  • 1 whole Gala Apple (peeled, Cored And Diced Small )
  • 1 whole Bosc Pear (peeled, Cored And Diced Small)
  • ⅛ teaspoons Pumpkin Pie Spice Or Cinnamon

Preparation

1) In a medium pot over medium heat, add the water and the sugar; bring to simmer.
2) Add the orange zest and the orange juice, and then the cranberries, the cubed apple and pear; gently stir to combine.
3) Cover the pot and allow to gently simmer for about 8 minutes, until you hear the cranberries begin to ‘pop’ and begin to crack slightly; then turn off the heat.
4) Stir in the pumpkin pie spice (or cinnamon, if substituting), and pour the hot mixture into a glass bowl; allow to completely cool before covering with plastic*. Keep it refrigerated until ready to serve. Enjoy!

*Mixture will be a bit ‘thin’ but will thicken as is cools due to the natural pectins.
