Description

A savory pumpkin preparation with Indian spices for a different approach to the sweet creations normally associated with pumpkins!

Ingredients

  • 3 Tablespoons Oil
  • 1 cup Chopped Onion
  • 1 Tablespoon Crushed Garlic
  • 1 Tablespoon Crushed Ginger
  • 2 teaspoons Garam Masala
  • 1 Tablespoon Ground Cumin
  • 1 Tablespoon Ground Coriander
  • 1 teaspoon Turmeric
  • 1 teaspoon Cayenne/Red Chili Powder
  • 1  Jalapeno, Chopped
  • 2  Large Tomatoes, Pureed
  • 2 cups Peeled And Cubed Unripe Pumpkin
  • 2 cups Water
  • 2 teaspoons Salt, Or To Taste

Preparation

In a skillet over medium heat, heat oil then add the onions. Saute until slightly golden then add the ginger and garlic. Add the spices and saute on low heat for about 2 minutes stirring constantly. Add the jalapeño and the tomato puree and continue to cook on medium heat, for about 8 minutes. Add the pumpkin pieces. Stir and mix well. Add salt and water. Mix well, cover and cook on medium until pumpkin is fully cooked, about 10-15 minutes. Serve hot with rice!
