Rustic Egg Salad made with crunchy, toasted bread, hard boiled eggs, tomatoes, green onions, soft cheese, and a drizzle of olive oil. Simple, yet incredibly delicious and comforting.

Definitely will make for Thanksgiving, as my Mom loves the pumpkin rolls but I don’t like making them. This looks like a great cookie version. Like the bite taken out in the picture-seeing the inside.

Just finished putting these together and I believe they are a keeper for my family. I will say I was expecting the cream to be more like the kind you find in the Little Debbie version, but this was still excellent. I did however cut the butter amount in half and added probably 2 tbsp of milk to make it a little smoother. I was also a bit more heavy handed with the vanilla and put in probably about a tablespoon. Love the circular design on these, would also be great for a halloween party Which I should mention we got about 21 total pies out of our batter! Thanks for sharing the recipe

These were excellent! My family is constantly requesting pumpkin rolls and I am sick of the mess and work they cause. These are a perfect solution! My husband and I like these better. They take a little time piping out but they are worth the effort you save going to the fridge to grab one! I would suggest cutting about 40-50 squares. Also line whatever platter you store them on, otherwise they will stick to the plate and eachother. They are much better the following morning out of the fridge. I think next time I’m going to use a little less spice as well, it’s a little overpowering. I’ll let you know when I try it. Thank you “bite-sized”!

Tried these today. Very moist and cake-like. Subbed a cup of food-processed oats for one of the cups of flour. Wonderful recipe!
