Description

A rich and dense brownie topped with a peppermint candy frosting is the perfect treat to satisfy your sweet tooth!

Ingredients

  • 1 stick Unsalted Butter
  • ½ cups Brown Sugar
  • 1 cup White Sugar
  • ¼ teaspoons Salt
  • 3  Eggs
  • ¼ cups Non-fat Plain Greek Yogurt
  • 1-½ teaspoon Vanilla Extract
  • 1 cup Unsweetened Cocoa Powder
  • 1 cup All-purpose Flour
  • 15  Andes Peppermint Crunch Mints, Unwrapped, Or As Needed

Preparation

1. Preheat oven to 350ºF. Spray an 8×8 baking pan with nonstick cooking spray. Set aside.
2. In a medium saucepan, melt butter over medium heat.
3. Once butter is completely melted, remove from heat and whisk in brown sugar, white sugar, and salt until smooth.
4. Add in eggs, yogurt, and vanilla, whisking well until combined.
5. Add in cocoa powder and flour, stirring until just combined.
6. Pour batter into prepared pan and bake for 25–30 minutes or until middle is set and toothpick inserted into center comes out with a few crumbs.
7. Remove brownies from oven and immediately place mints on top layer of brownies.
8. Let sit for several minutes to melt the mints. Using a knife or spatula, swirl the mints to create a frosting, spreading it out in an even layer across brownies.
9. Let cool completely in pan until frosting has hardened.
10. Cut into bars and serve.
